Dine at the Blue Canyon Restaurant
The Blue Canyon restaurant has been wowing guests ever since opening in June. The rustic lodge building is reminiscent of the lodges found in our national parks like Yosemite or the Grand Canyon. On Sundays a Jazz Brunch draws a crowd of music lovers for delicious food from the heartland served with up with great jazz music. Read More
F&B Makes a Comeback
What is the right role of food and beverage in a hotel? Can it be a profit producer, even though catering is the only segment that probably makes any money? Is it an amenity that just like the swimming pool, few guests use but all expect to be there? Or can it add significant dollars to the bottom line, keep your guests satisfied and prevent them from going off property for meals?
"An increasing number of hotel owners and operators are convinced that f&b should no longer be the black sheep of the lodging industry. Rather, they say, foodservice is worth the effort, both because it is an amenity many guests want and because it can make major contributions to the bottom line. What they don't agree on, however, is the best way to provide profit-producing hotel f&b.

2004 Tabletop Performance Award Winner: Blue Canyon
By Howard Riell, Contributing Editor
The Blue Canyon Kitchen and Tavern in Twinsburg, Ohio, which opened in June 2004, was conceived to express the ambiance of a mountain lodge and designed to transport diners to the Rocky Mountains.
Blue Canyon’s mood — rustic, lodge-like, comfortable, rich, cozy and relaxed — is apparent in every part of the operation, but especially in its tabletop presentation, which earned this independent restaurant top honors in the Over $30 Check Average category of FE&S’ 2004 Tabletop Awards program.

Retreat to Blue Canyon Kitchen & Tavern
By Nancy Loyan Schuemann
Perched on a sandstone and pine tree-covered bluff, a white cedar log lodge with stone chimneys overlooks the rolling hills and valleys of Twinsburg. With a carved resin mountain lion set against a ledge and mounting the entrance sign, the Blue Canyon Kitchen and Tavern could easily fit in the mountains Out West. Instead, the Blue Canyon is located at Route 82 (East Aurora Road) and I-480 East in front of the Hilton Garden Inn and Conference Center. A fitting location, since both facilities share the vision of owner-developer, Twinsburg resident Bob Voelker. Read More
The Kitchen
BY Michael von Glahn
Rather than a traditional groundbreaking, Blue Canyon hosts a "groundburning" on Halloween. A redwood fire is kindled in the approximate middle of the future kitchen. The restaurant partners, dignitaries and contractors toast homemade marshmallows over the blaze to create s'mores like those that will be on the dessert menu.Read More
Ah, Wilderness! : Blue Canyon Kitchen & Tavern, a rustic haven in the middle of suburbia
By Doug Trattner Wednesday, July 28, 2004
Blue Canyon's staff makes meals for hundreds nightly.
ROUNDING THE BEND of an industrial parkway , motoring past a Damon's, a Donato's and a Cracker Barrel, it's obvious we aren't exactly in the middle of the wilderness. Yet there it is. Rising from a small bluff on the side of the road is a stately timber-frame lodge, the sort that looks rather at peace in a national park, but utterly incongruous in an industrial park. Read More

More cool food comes to the hinterlands.
BY ELAINE T. CICORA
For years, when residents of Hudson, Twinsburg, Macedonia, or the other southern suburbs wanted a dining experience to brag about, they had to head into Cleveland. (Hey, we love the Inn at Turner's Mill, but just how often can you eat there?) But finally, the scene is heating up. We heard about Downtown 140, executive chef Shawn Monday's wine-and-tapas bar scheduled to open in Hudson in January. Now, more exciting news: executive chef Brandt Evans, the force behind the former Kosta's in Tremont, is coming to Twinsburg. Read More
