Blue Canyon Kitchen & Tavern's Spice Set includes the spice blends described below and recipe cards featuring Blue Canyon menu favorites. Chef Brandt's Tip: Mix any of the spices with sour cream for a delicious chip dip! $20 per set. Available at Blue Canyon Restaurants.

  • B.C. BBQ Cowboy Dust is great for grilling! This special blend of Ground Mustard, Sweet Smoked and Spanish Paprika, Brown Sugar and other Herbs and Spices is delicious on pork, chicken, beef, steaks and vegetables.
  • Killer Steak Crust isn't just for steak! It brings new flavors to pork and chicken too. This cowboy blend of Basil, Kosher Salt, Garlic, Onion, Oregano and more will have your taste buds dancing.
  • Chuck Wagon Pork Crust is cowboy tasty! Salt, Pepper, Garlic, Onion and other Herbs work great on pork, chicken, beef, shrimp and even vegetables.
  • Bucking Bronco Blackening Dust combines Southwest Chiles, Spanish Paprika, Cumin, Coriander and more into a flavorful blend. Perfect as a rub for fish, chicken, steaks and other meats.

Blue Canyon Kitchen & Tavern's Wines have been specially blended by Chef Brandt. Wines are available at Blue Canyon Restaurants in the following varieties:

  • Barbera - oaked flavor and rich berry textures. A nice match with our Winter Squash, Sage Gnocchi with a Tomato, Goat Cheese Fondue or a Pumpkin Spaztel with Spiced Lamb loin.
  • Syrah - peppery herbs of anise and cinnamon mingle finely with our Wild Mushrooms & Lobster Risotto with Truffles.
  • Riesling - pairs seamlessly with spicy Thai and other robust flavors with its great pineapple after tones and mineral backbone.
  • Chardonnay - superb floral notes and aromas pair perfectly with Crab Crusted Black Grouper with a Lemongrass, Scallion Butter Sauce.
  • Madison - Named after Chef Brandt's baby girl, a sparkling wine made in a traditional champagne style - mouth-watering and complex, with a slight hint of grapefruit. Best served with our Smoked Salmon Potato Cake with a Caviar Nage.
  • Fratelli Roso - black currant, slight mocha undertones. Goes well with our Smoked Duck Breast and signature Cherry BBQ sauce or a classic Papperdelle Cinghiale.
  • Cabernet - a bold blackberry austere blend with dark cocoa. Delicious paired with our Smoked Blue Cheese Cowboy steak with a rich, maple butter sauce.
  • Syrah - Blackberry jam, espresso, cinnamon-nutmeg taste and smoked-pepper after-tones. Its culinary companion is our Braised Smoked Pork Belly and Sauteed Wild Golden Chanterelle Mushrooms or Char-Grilled Bison with Smoked Red Onion and a Mushroom Ragout.
