Sweet Corn & Shitake Mushroom Fritters

I was surprised—these were great! I was afraid they'd be too mushroom-y but they were perfect. Great balance between the sweetness of the corn and that grounded earthiness of the mushroom. Super tender, as well, with that miso aioli that's begging to be eaten with a spoon!
